Choila is one of the popular Newari dishes. In Fact, Choila made from buffalo meat is one of the essentials in the Newari party (voj). Veg Choila is the vegetarian version of the same Newari Chiola gaining its popularity among the Vegetarian population. It tastes as good as the traditional Choila and I think even the non vegetarian people can enjoy it whenever they crave for Choila.
Let me start with the ingredients:
Soya chunks – 300 gms
Red onion – ½ cup (Finely Chopped)
Green onion – ½ cup (Finely Chopped)
Fresh Red Chilli – 3-4 (6-7, if you can handle spicy)
Tomato – 2 (Medium sized) (Finely Chopped)
Fenugreek seeds – 1 teaspoon
Cumin seeds – ½ tablespoon
Garlic – 1 tablespoon (chopped)
Ginger – 1 tablespoon (chopped)
Turmeric Powder – 1 teaspoon
Salt to taste
Lemon – ½
Cilantro – around 8 leaves
Oil – 2 tablespoons (mustard oil gives the perfect aroma)
Instructions:
Soak your soya chunks in hot water for 10-15 mins.
While the soya chunks are getting soaked, dry roast the cumin seeds, grind them with mortar and pestle and keep them aside.
Similarly, grind the red chilies and chopped garlic and ginger together.
Now, Squeeze all the water out of your soya chunks and keep aside.
In a pan dry roast soya chunks until it is golden brown with constant stirring. It takes around 6-7minutes in high heat.
Then, in a pot, mix the roasted soya chunks with salt and freshly roasted and ground cumin seeds, cover it.
Meanwhile, heat the pan, put the oil. After the oil heats up, put fenugreek seeds.
After the fenugreek seeds turn dark brown, add turmeric powder and add finely chopped tomatoes, stir and cover the pan. Keep it in low heat until the tomatoes get well cooked.
Now, add chopped green onion, red onion, and the ginger-garlic pastes you prepared on the top of soya chunks, put the tomato mixture from above, add lemon juice and chopped cilantro and mix it well using your hand.
