    Chai Masala Recipe: A Flavorful Blend of Spices

    Chai Masala is a fragrant and flavorful Indian spice blend used to enhance the taste of traditional chai (tea). With a perfect combination of warming spices, it adds depth and richness to your tea. Here’s a simple recipe to make your own chai masala at home.

    Ingredients:

    •   4 tbsp green cardamom pods
    •   3 tbsp whole black peppercorns
    •   2 tbsp whole cloves
    •   1-2 cinnamon sticks
    •   1 tbsp fennel seeds
    •   1 tsp dried ginger powder (or fresh ginger when making tea)
    •   1 tsp nutmeg (optional)
    •   2-3 star anise (optional)

    Instructions:

    1.  Toast the Spices:
    •   In a dry pan over medium heat, toast the green cardamom, black peppercorns, whole cloves, and cinnamon sticks for 2-3 minutes. Stir continuously to avoid burning. This releases the aromatic oils and intensifies the flavors.
    2.  Grind the Spices:
    •   Once toasted, let the spices cool for a few minutes. Use a spice grinder or mortar and pestle to grind them into a fine powder.
    3.  Add Additional Spices:
    •   Mix in the fennel seeds, dried ginger powder, and nutmeg. If using fresh ginger, you can add it directly when brewing your tea. If you like an extra anise flavor, add star anise at this stage.
    4.  Store the Chai Masala:
    •   Store your chai masala powder in an airtight container. It will stay fresh for up to 6 months if kept in a cool, dark place.

    How to Use Chai Masala:

    To prepare Masala Chai, follow these steps:

    •   Ingredients for One Cup of Masala Chai:
    •   1 cup of water
    •   ½ cup of milk (or any milk substitute)
    •   1 tsp loose black tea or 1 tea bag
    •   ½ tsp of chai masala (adjust to your taste)
    •   Sugar or sweetener to taste
    
    1.  In a small saucepan, bring water to a boil.
    2.  Add tea, chai masala, and sugar. Simmer for 2-3 minutes.
    3.  Pour in the milk and bring it back to a boil.
    4.  Let it simmer for another 2 minutes, then strain and serve.
